Yesterday was my day off and I decided to get a lot done which meant I needed to make sure that I ate throughout the day to keep up the energy. I shot and edited some videos for my youtube channel, scheduled some blog posts, cleaned my apartment, ran some errands and managed not to forget to eat all day*. I’m feeling pretty accomplished. I love reading these types of posts on other sites because they always give me inspiration when I’m in a food rut. Since I had the day off from my 9-5, I thought I’d make an extra effort treat throughout the day.
B R E A K F AS T
I’m really liking this vegetable and egg scramble and it’s so quick and simple which means I am more likely to eat a good breakfast in the morning. I took some mushrooms, diced onion, bell and serrano peppers, some purple kale, and a bit tomato. I tossed all the veggies into a skillet over medium heat with a tablespoon of olive oil. Once they’re sautéed, I add two eggs and then scramble it all together. I ate the scramble with some sourdough toast and a side of diced tomatoes drizzled with some of the olive oil, salt and pepper. And of course, no breakfast is complete without coffee. I’ve been loving this Starbucks Espresso Roast in the French Press.

I could eat this everyday. Add a bit of greek yoghurt and granola on top?! I am here. for. it.
L U N C H
Lunch was a bit cheeky. In my defense, it was leftovers from yesterday and instead of cooking or going out, reheating some fried chicken and rolls seemed like a pretty good deal. Especially since this isn’t just any fried chicken. This is Seattle’s own, Ezell’s famous fried chicken. I’ve learned pretty quickly that Ezell’s is a pretty big deal here and the flavor of this chicken?! Accompanied by a cold local beer, lunch was delicious.

My apartment has been way too hot so the idea of turning my stove or oven on isn’t too appealing. Unfortunately, even on a day off, I still managed to miss dinner. A bowl of Reese’s Puffs cereal (so. good.) ended up being my meal. I figured I didn’t need the permanent reminder of my weakness, so I’l let you conjure up your own images of that bowl of deliciousness. I apologize for your sudden craving…
