Acai Bowls for Breakfast

During the summer I tend to crave simple but impactful breakfasts. My days are busy with either work at my 9-5 or whatever extra curricular activities I tend to get myself into and sometimes eating takes a backseat or I completely forget altogether. Acai bowls are a quick and easy and a great way for me to start my day on a good note and really boost my energy for whatever I’m doing that day. Not to mention, they’re fun and delicious to make! Depending on what I have available, I will either use fresh fruits or frozen. Frozen fruits help get that smoothie consistency but you can still achieve that by using your fresh fruits and adding ice.

INGREDIENTS

makes 2-3 servings

2 Acai  frozen packets
1 cup frozen berries
1 1/2 bananas
1 tablespoon dark chocolate
peanut butter
coconut flakes
granola
honey

DIRECTIONS

Blend together the Acai packets, frozen berries of your choice, 1/2 banana, chocolate and peanut butter. I really like peanut butter so I tend to go heavy but 2 tablespoons should be just fine if you aren’t crazy about PB.

Once you’ve achieved that wonderful smoothie texture, pour your mixture into a bowl. This is where you get to be as creative as you’d like. I like slicing up the bananas, adding more of the dark chocolate on top, followed by lots of granola (honestly my favorite part), coconut flakes and a healthy drizzle of honey. If I could start my day with these every morning, I would be totally fine with that.
